Dry white wine – PGI Imathia

This white wine is produced from black grapes of the Xinomavro variety, which come from selected vineyards in the Naoussa area and are vinified in our winery. The destemming is followed by pre-fermentation extraction to enhance the varietal aroma. The pomace is then separated from the skins and, after a light de-mudging, is sent for fermentation in new French oak barrels. Aging in barrel with the lees (elevage sur lies) lasts 6 months with continuous battonage. Bottling is followed by maturation in the bottle for at least 3 months. A wine that shows the potential of Xinomavro as a raw material for white wines. Golden color. Complex bouquet, combining the aromas of Xinomavro (fruits, white flowers) with the aromas that the barrel imparts to the wine (honey, nuts, coffee, chocolate, tobacco). In the mouth it is full of a peppery flavor, rich body and a long aftertaste. One of the few Greek white wines that are amenable to aging.

Accompany: Oven-baked fish, as well as fish with white sauce. It pairs perfectly with game dishes. Served at 10-12° C. Special suggestion: Sarmades of Naoussa (Cabbage stuffed with cabbage according to a traditional local recipe).
